- Week 2 — Budget structure: How to build a catering budget from scratch, including hidden costs most planners miss. Real figures from Ukrainian venues and caterers.
- Week 3 — Vendor selection: How to evaluate caterers, compare proposals, and negotiate contracts without burning relationships.
- Week 4 — Menu planning: Dietary requirements, seasonal availability, portion sizing, and how to create a menu that works for the event format.
- Week 5 — Logistics and staffing: Service flow, staff briefing, setup timelines, and contingency planning for common catering failures.
- Week 6 — Day-of coordination: Managing the catering team on-site, handling last-minute changes, and closing out with a vendor debrief.
